The Oceanic Cocktail Recipes





The Lion Fish




Makers Mark Bourbon (50ml) stirred with Sugar Syrup (5ml), Cherry Bitters (2 dashes), Angostura Bitters (2 dashes) and Absinthe (2 dashes – for a light sting) then strained over a big block or three of ice, garnished with a dehydrated wheel of orange and a fresh zest.  







The Stingray




Mount Gay Black Barrel (25ml) shaken with Orgeat (20ml), Angostura bitters (25ml – yes, 25ml – take the top off the bottle and pour away) Lime Juice (25ml), Egg White (half) or Aquafaba (25ml), and ¼ of a teaspoon of activated charcoal. Strain into a Coupette and garnish with freshly grated nutmeg.




The Turtle




Basil Instinct’ – Enemigo tequila (50ml), Fresh Basil (8-10 leaves), Fresh Lime Juice (25ml), Sugar Syrup (15ml) and cardamom bitters (2 dashes) shaken as hard as possible and strained and sieved into a martini glass, garnish with a sprig of baby basil.









The Dolphin




Eclipse Mount Gay Rum (50ml) shaken with Lime Juice (25ml), (tropical atoll) Blue Curacao (10ml), Sugar Syrup (10ml), Egg White (half) or Aquafaba (25ml), shake and strain into a glass, garnished with some dried cornflower petals.




The Crab




Four Pillars Bloody Shiraz Gin (50ml), Chambord (10ml), Lemon Juice (20ml), sugar syrup (5ml) Egg White (half) or Aquafaba (25ml), shake and strain into a glass and top with soda, gently. Garnish with some red currants.









The Whale




Eclipse Mount Gay Rum (50ml) shaken with Lime Juice (25ml), (tropical atoll) Blue Curacao (10ml), Sugar Syrup (10ml), Egg White (half) or Aquafaba (25ml), shake and strain into a glass, garnished with some dried cornflower petals.
